In the context of our Food Service Digital Hub project, Katharina Blöcher and Rainer Alt have published a book chapter titled "The Potentials of Personal Data Management for Smart Service Innovation".

It analyzes the potential of personal data for the development of novel smart services and presents a systematic approach to the management of personal data. This consistently comes from the customer - being “customer dominant” - and focuses on understanding the numerous data resources, the development of a data-based value proposition, the data sovereignty that lies with the customer and the design of adapted business processes. A section is dedicated to the restaurant industry and illustrates the application of this approach to this industry.
